1.- Coffee Receipt: We have designated a special restricted and closed area inside our ware- house were the coffee beans are received and stored. After we have analyzed and accepted the quality of each lot we allocate 75 bags (at 69 kg each) batches and perform caffeine content test in order to determine the exact extraction required.
Before moving the coffee into the production area all facilities, transporters, tanks, contain- ers and equipment have to be cleaned by air, steam and vacuum in order to guarantee that it will not be contaminated with other coffees.
2.- Natural Water Process: As a first step we have to prepare the coffee beans before extrac- tion. They are transported into the first stage tank, and are exposed to a jet of steam under spe- cific conditions of temperature and pressure. After that they are swollen in warm water in order to facilitate the caffeine extraction.
Once prepared, the coffee moves by gravity to the next step is where the caffeine is re- moved, the coffee beans are immersed in a natural solution (water and coffee soluble solids without caffeine) at specific conditions of flow, temperature, and pressure to obtain coffee beans that are 99% caffeine free. The solution obtained passes through a special filter made of natural cellulose and activated charcoal which removes the caffeine allowing us to use again the solution in the extraction process.
It is important to mention that the whole process is a closed system, 100 % chemical free that has been certified as organic by OCIA under the regulations of NOP, JAS, EU, COR and SAGARPA since July 2003.
The coffee beans are dried until they have a standard moisture between 11 and 12 per cent. This step is performed quite slowly at low temperatures in order to preserve the coffee characteristics. After the drying the coffee beans are polished using brushers to obtain a better final product appearance and they are packed for exportation in 69 kg bags, being stored once again in a designated odecaf area until they are shipped.
About our coffee Packaging
We use high quality Aluminium Foil bags for packing our coffee, they are heat sealed and can be resealed after opening using a suitable heated device with two flat sides.
Our coffee bags feature a One Way Degassing Valve, this ensures our freshly roasted coffee can continue to give off carbon dioxide while packed and the bag will not expand like a balloon. Degassing is a natural side effect of the coffee roasting process, and different origins will give off carbon dioxide for longer or shorter periods of time so it is essential to have a quality one way valve to release this gas. Freshly roasted coffee will start to loose taste and flavour in the presence of Oxygen, which is why we seal it in one way valve bags to preserve freshness - and the natural process of giving off carbon dioxide helps push out any oxygen after the bag is sealed..
